Freeze Drying Indian Food in a Harvest Right Freeze Dryer

We made a series of videos about freeze drying Indian food in a Harvest Right Freeze Dryer. These are some of the dishes we freeze dried:

  • Shrimp Saag — Shrimp in a Creamy Spinach Sauce
  • Chicken Tikka Masala — Boneless Chicken in a Masala Sauce
  • Bhendi Masala — Okra in a Masala Sauce
  • Lamb Curry — Boneless Lam in a Spicy Curry Sauce
  • Aloo Gobi — Potatoes and Cauliflower in an Exotic Sauce (Vegan)
  • Keerna Dal — Ground Lamb with Lentils
  • Mulligatawny Soup — Lentil Soup with Rice and Chicken

Note: For the purpose of full disclosure, we purchased all of these Indian dishes for freeze drying and for fresh taste comparison from the nice folks at Curry Bowl here in Eugene, Oregon. All of their food comes with our highest recommendation! UPDATE: We have some very sad news to report. Curry Bowl has closed their doors. :(

Part 1: Freeze Dried Shrimp Saag & Chicken Tikka Masala

To ensure proper freeze drying, we cut the shrimp (saag) in half, and cut the chicken (tikka masala) into smaller pieces. Although we rehydrated both items with what seemed to be a reasonable amount of water, after reviewing the video it looks like we did not use enough water. As a result, the shrimp did not come back to a completely normal texture, and some of the chicken seemed a bit dry. Next time, we will pay closer attention to the amount of water we use when rehydrating the meals.

Part 2: Freeze Dried Bhendi Masala, Lamb Curry, Aloo Gobi & Keerna Dal

In this 1/2 hour+ video, we freeze dried four (4) kinds of Indian Food dishes in our Harvest Right Home Freeze Dryer and compared the Freeze Dried result with fresh dishes.

Part 3: Freeze Dried Mulligatawny Soup

Here is a batch of Mulligatawny Soup that we processed through our Harvest Right Home Freeze Dryer (a popular Indian food soup). On this day, we tried both a fresh batch of soup, and what we had previously freeze dried. One thing to note is that EpicenterJanet was out of town on this episode, so only EpicenterJohn and EpicenterBryan made decisions about how the freeze dried version worked. We say, DO IT!!!
