One of our YouTube Channel subscribers ("Bryan out West") came up with an awesome recipe for a Thai Chicken Udon Soup and we freeze dried a big batch. WOW! You need to make this! Bryan Out West shot a video on how he made this dish and, with his permission, we have incorporated it (with a few revisions) for this video.
EpicenterBryan's Chicken Thai Udon
(Revised recipe due to ingredients on hand)
- 6 chicken breasts
- 1 small yellow onion, chopped
- 1 red bell pepper, chopped
- 1 tablespoon freshly grated ginger
- 3 carrots, sliced
- 4 sticks celery, sliced
- 1 package small mushrooms, sliced
- 3 boxes Thai Ginger stock*
- 1 package pre-cooked udon noodles (5-lb pkg)
- 1½ tablespoons garlic, diced
- Salt & pepper to taste
* Note: The secret ingredient is a Thai Ginger-infused broth made by Swanson.
1) Cut chicken into 1 inch cubes and saute. 2) Cut celery and carrots into ¾ inch thick slices. 3) Once the chicken is beginning to cook, cut onion and peppers into 1 inch pieces and add to pot. 4) Add garlic, ginger, carrots, celery, mushrooms and let cook. 5) Once the vegetables have cooked down, add broth. 6) Put on lid and simmer for 45 minutes. 7) Add noodles to the pot and simmer until noodles have expanded.

- 1 tablespoon fresh grated ginger
- 4 carrots
- 1 stalk celery stick
- 1 package small mushrooms, sliced
- 2 boxes Thai ginger stock
- 1 5 lb. package pre-cooked udon noodles
- 1½ tablespoons diced garlic
- Optional: 1 small jalapeño
- Salt & pepper to taste
