How about a freeze dried Coconut Cream Pie from Shari's Cafe & Pies!
We froze the pie overnight, and then quartered it before cutting it into 1/2" thick slices for the freeze dryer. It was a bit difficult to cut from a purely frozen state, but after a while it softened up and was much easier to cut. We recommend letting a cream pie thaw for about 30 minutes before you slice/cut for the freeze dryer.
We ran it through a standard freeze dry cycle and it turned out great! The main pie section was very crunchy just like when you freeze dry ice cream. The topping was delicate and was so delicious we may do a whole batch of just whipped cream!
One thing to note: The topping wants to break away from the main pie filling, so be sure to have a plate ready to catch the broken goodness!
Will we do this again? Absolutely, without a doubt. Next time we will try a Banana Cream Pie, and we're really looking forward to freeze drying a Shari's famous Key Lime Pie too!
