is the difference between what is called a #10 and a #2-1/2 size can?
Gourmet Reserves products are packaged in #10 and #2-1/2 can sizes.

can) on the right.
The large size can, called a #10, is about the size of a 1 gallon paint
can. Its the most widely used size for delivering large amounts of product
to food service users, like restaurants. If you have ever been to a Costco
warehouse and have seen a huge can of Tomatoes, that is a #10 can. The
smaller can in the photo is basically 1/4 the size of the #10 can. The
industry calls it a #2-1/2 can size. It is larger than most cans you find
at your local super market.
is the shelf life and storage conditions for Gourmet Reserves foods?
The shelf life varies upon the contents of the can, anywhere from 8 to
15+ years (depending upon temperature/storage conditions). The manufacturer
has provided a very conservative estimate of at least 10+ years or longer
when stored in recommended conditions. However, it is possible that some
beans, grains, and other types of food will store for long periods of time
in ideal conditions.
Extended shelf life is primarily affected by oxygen, fat, moisture,
heat and time - the lower the values the better. Excessive quantities of
these elements will cause loss of nutritional value, off flavors, odors,
and rancidity. Handling and physical damage must also be kept to a minimum.
Damage to can seams and excessive rust must be avoided. Gourmet Reserves
products are sealed in heavy gauge metal cans with an oxygen absorber added.
Be sure to observe storage tips for best results.
Provided that proper storage procedures have been followed, we can offer
general guidelines as to the shelf life expectations of Gourmet Reserves
foods. Once the foods leave our warehouse we have no control over storage
conditions. So please be conscientious and avoid high heat - the cooler
the better (without freezing).
It is recommended to use the contents of opened
cans within 1 to 2 weeks (using resealable lid between uses).
